Instructions

For the drink, combine all ingredients in a shaker with ice. Shake until chilled and strain into your rocks glass. Garnish with a lemon peel.

Notes

To make the honey syrup, boil equal parts honey and water and cool. If you want to get weird with your ice, fill a rocks glass a little less than halfway full with water. Prop it up in your freezer so that the water sits at an angle in the glass and freeze overnight. Super easy, but adds a ton to presentation! This cocktail is definitely going to be one of my new go-to drinks. It's also super easy to batch and bring to a party, as it's an equal parts cocktail! The bitter orange notes of the aperol play very well with smokey mezcal and tart lemon, and the whole drink is mellowed out by the sweet floral honey.
