Instructions

Strip 1 tablespoon of thyme leaves and add to a cocktail shaker. Add the simple syrup, then gently muddle the leaves. Add the gin and lime juice then vigorously shake with 3–4 medium-sized ice cubes. Double strain into a chilled cocktail glass and garnish with a sprig of thyme.
