Instructions

Shake and strain the ingredients into a coupe glass. Garnish with a salt rim and a lemon twist.

Notes

The caramelized honey really walks you gently away from the lemon and into the mezcal, and ties the whole thing together. It works fine with just honey syrup or just dry curacao, but the mezcal gets way more aggressive without it. We're aiming for a "texas fall" drink, because yeah, it's coming up on the fall season but it is still looking to be 100+ degrees for the foreseeable future down here. Tentatively naming it Golden Hour while we discuss, but might end up calling it "something something margarita" to get the flavor profile across.
